Mixed berries and oats muffins


An easy and fast recipe for muffin-lovers! 
Make: 6 medium size muffins
Preparation time: 15-20 minutes

Ingredients
65g butter, melted
1 1/3 cups of plain flour
2 teaspoons baking powder
1/2 cup casting sugar
a pinch of salt
3/4 cup milk
1 large egg
250g frozen mixed berries, defrosted
1/2 cup of oats, and a handful for sprinkling

Preheat the oven to 200°C.
Stir in together plain flour, baking power, oats, casting sugar and a pinch of salt in large mixing bowl. 
In a separate mixing bowl, pour in milk and then beat the egg lightly with the milk, then pour in the melted butter (should be cool) and lightly beat to combine. Pour into the dry ingredients, and stir to combine (until it becomes glossy and gluey).
Gently fold in the mixed berries and spoon the mixture into the muffin cups. Sprinkle the oats on top and bake for 25 minutes.

If you spoon your mixture to the height of your muffin cups, the muffins should be ready when the tops rise to half the height of your muffin cups. The tops should also spring back to your touch.

Leave out to cool slightly for 5 minutes in then allow them to sit on a rack to cool for at least 15 minutes.
